Coat a 9x13 baking dish with butter.
In a bowl work in by hand or a pastry cutter....
- 1 1/2 C All-Purpose Flour
- 1 1/2 C Quick Oats
- 1 C Packed Brown Sugar
- 1 tsp. Baking Powder
- 1/2 tsp. Salt
- 2 Sticks of Butter cut into pieces.
Press 1/2 mixture into the 9x13 dish. Then spread strawberry jam into a single layer (10-12 oz.). Add second half of mixture and carefully press into place. Bake for 30-40 minutes at 350 degrees F.
My kids wouldn't stop eating them...nor could I, for that matter!
Thanks for posting this recipe on your blog... It was excellent! I didn't have any strawberry preserves on hand, but I did have some fig preserves that I was given recently that I hadn't used yet. I thought, hmmm... This might be like fig newtons, but better. So I substituted the fig preserves for the strawberry, and the resulting product left fig newtons in the dust! My husband really liked it too. I can't wait to fix these again, maybe next time with strawberry, or fig, or maybe date, or apple butter, how about marshmallow creme with chocolate nutella like s'mores? Maybe peanut butter and jelly? The possibilities are endless!
