Andes Mint Cookies...

If you enjoy Andes Mints, you are certainly going to LOVE this recipe. It's made of only four ingredients and taste just like the Girl Scout Thin Mints. I couldn't stop eating them.

Not good. Not good at all.

Oh well. My next post will be on the workouts I'm having to do just to burn off all these extra calories.

Andes Mint Cookies

What You Will Need:
1 Devil's Food Cake Mix
1/2 Cup oil
2 eggs
1 package Andes Mints (I used the baking chips!)

What You Will Do:
  • Preheat oven to 350 degrees.
  • Combine cake mix, oil, eggs, and 1 cup of the baking chips. Drop onto baking sheets, 2 inches apart. Bake for 6-9 minutes, being careful not to overcook them.
  • Immediately after removing from the oven, place an Andes Mint or spoonful of baking chips on top of the cookies.  After about 5 minutes, use the back of the spoon to spread the melted mint across the top.
  • Makes approximately 36 cookies.
