Instant Pot Keto Crack Chicken...

Before we begin I must apologize in advance for two things: first of all, I have no idea where the name came from. Is it addicting? It is good, that I can agree with, but I wouldn't quite call it addicting.

Secondly, the picture I took of my plate before I ate it does not even do it any justice. It looks sloppy and messy, although that may be the cheesy, creaminess of the sauce that the shredded chicken is served in.

What I can say for sure is that this was a delicious and filling meal packed with lots of flavor. So if you have a Instant Pot (and I LOVE mine!), pull it on out and give this recipe a try. You will not regret it.

Instant Pot Keto Crack Chicken

What You Will Need:
  • 2 lbs chicken breasts or chicken tenders (boneless/skinless)
  • 12 oz. cream cheese (block and a half)
  • 2 1 oz. packets of Dry Ranch Seasoning mix or 4 Tbsp of the homemade version (I made my own and can be found HERE)
  • 8 oz. bacon crumbles
  • 1/2 Cup Cheddar Cheese
  • 1 cup bone broth or water
What You Will Do:
  • Place 1 Cup of liquid (bone broth or water) in the bottom of the pressure cooker.
  • Prep the cream cheese by cutting the blocks into large cubes
  • Add the chicken to the pressure cooker.
  • Add the cream cheese and seasonings on top of the chicken.
  • Set the pressure cooker to high for 10 minutes for chicken tenders or 12 minutes for full chicken breasts.
  • Once the time is up, do a quick release.
  • Carefully remove the chicken and shred it using two forks.
  • Place the shredded chicken back in the liquid juices that are reserved in the pressure cooker.
  • Add the cheddar cheese and bacon crumbles to the shredded chicken and mix the ingredients together.
  • Place the lid back on the pressure cooker (but don't turn it on, it will be hot enough to melt the cheese and warm the bacon) for about 5 minutes. Letting the ingredients sit for a few minutes will allow the sauce to thicken.
  • Serve warm and enjoy!

I went ahead and used Pioneer Woman's recipe for Dry Ranch Seasoning and loved the flavor better than the packet. I believe the nutritional information is based the homemade version. This makes six servings with a net carb value of 3.5 g.

I finished mine off with jalapenos which only added to the delicious flavor without adding carbs!

...and please, don't base the flavor on the picture. It really does taste delicious!! Promise!
