"Kale"slaw...

Coleslaw can come in many forms, colors, tastes...some with lots of vinegar, pepper, and cabbage. Some consisting of cabbage and a mayonnaise-slash-vinegar dressing.

Because of its many forms, I've found eating coleslaw to be an aquired taste. It's just been within the last couple of years that I actually enjoy pairing it with pulled pork. Something about the vinegar and the smokiness of the meat that hits just the right spot on the palate.

My sister and her husband enjoy a different take on this simple classic by using a Sweet Kale salad kit  mixed with a more low-carb friendly sauce. There's even a little packet with roasted pumpkin seeds and dried cranberries to add a bit more flavor and texture.

Sweet Kale Salad

What You Will Need:
  • 1/2 cup of mayonnaise (Hellman's preferred)
  • 3 Tbsp. White vinegar
  • 1 tsp celery seeds
  • 3 Tbsp. Splenda (or three Splenda packets)
  • Sweet Kale Chopped Kit (After trying many different brands I REALLY prefer Taylor Farms...not as many huge chunks of the cabbage)
What You Will Do:
  • Mix the mayonnaise, vinegar, celery seeds, and Splenda in a bowl until smooth unified consistancy.
  • Taste before adding Kale kit and adjust for desired flavor.
  • Add Kale kit without the Poppyseed Dressing.

The nutrition calculator from Very Well Fit gave this information. The carb count is higher because it includes the dressing packet. But since we're making our own dressing, the count will definitely be lower.
