Skinny Girl Cupcakes...

If you read my post about the DIY cake plates my Mom and I put together today, then you will also notice the mouth-watering cupcakes that were on top of one of those finished plates...
Yum! This is a super easy recipe that results in a low calorie, Weight Watcher approved result. And that includes the frosting!! I actually did not mind my kids eating them because they are not loaded with sugar.

Below is the recipe as I made them! If you do happen to click on the Six Sisters Stuff link, you will notice that these are Funfetti  Cupcakes that are made with Sprite Zero. I used the same concept but used a Devil's Food cake mix with a Coke Zero. You can actually use whatever cake mix with any type of coke zero. I would suggest Coke Zero for darker mixes and Sprite Zero for the white or vanilla ones.

Skinny Girl Cupcakes
Cupcakes:
What You Will Need:
1 package Devil's Food cake mix (just the powder, not the recipe on the box)
1 12-oz. can of Coke Zero

What You Will Do:
  • Preheat oven to 350 degrees F. 
  • Line 18 cupcake tins with paper liners.
  • In a large bowl, combine cake mix and Coke Zero together. Continue to mix until the batter is smooth, without any lumps.
  • Pour approximately 1/4 cup of batter into every cupcake wrapper.
  • Bake for 20 minutes but begin checking the cupcakes after 15 minutes. Time may differ according to ovens. 
  • Let cool before frosting.

Frosting:
What You Will Need:
1 8-oz. container Fat Free Cool Whip
1 1.5-oz. pkg. Fat Free Vanilla Jello Instant Pudding (just the powder, not the recipe on the box)

What You Will Do:
  • In a mixing bowl mix cool whip and pudding. Mix with a whisk by hand or an electric hand mixer until smooth.
  • Spread or pipe over cooled cupcakes. To pipe fill a zip-loc bag with the frosting and cut a hole in one of the bottom corners. Twist the top of the bag so that it conforms into the shape of an icing bag. Pipe the frosting in a circular motion on the top of the cupcake.
  • If you pipe the frosting (I thought it tasted better with more frosting) then you will get enough for at least 14 cupcakes.
