Almond Joy Fat Bombs...

If you've checked out my post of Peanut Butter Fat Bombs, boy oh boy have I got an even better recipe for you! I found a recipe this last week that takes the fat bombs, but adds coconut and almonds to give the taste of an Almond Joy!

My husband was a little leary at trying them since he enjoyed the original fat bombs so much, but even HE couldn't ignore the fact that these are AWESOME!

Now I've tweaked the recipe a tad because I found that it did not have any sweetener in it and the first three ingredients really had not taste to them when melted together. Below I've typed the amount that I added since that's when I thought they tasted perfect. You may not like them so sweet or you may want them sweeter. You taste and decide.

Oh, and before I share the recipe, this filled 24 mini cupcake tin to the top of each cup. So here we go...

Almond Joy Fat Bombs
What You Will Need:
  • 1 cup peanut butter
  • 1 cup coconut oil
  • 3 Tbsp unsweetened cocoa powder
  • 4 Tbsp Stevia (or your choice of sweetener)
  • 1/2 tsp coconut flakes per cupcake cup
  • 2 to 3 almonds per cupcake cup
What You Will Do:
  • Combine peanut butter, coconut oil, cocoa powder and sweetener in a microwave safe dish and heat until melted (about 30 seconds--add 15 seconds if not quite melted).
  • Stir until well mixed.
  • In cupcake tin place one to two almonds in the bottom of each tin. Cover with the 1/2 tsp of coconut flakes.
  • Fill each tin with the microwaved mixture until almonds and coconut flakes are covered. (I then placed one more almond on top).
  • Freeze for 30 minutes until set.

After plugging in the ingredients and serving sizes into the Very Well Fit Nutrition Calculator, total carbs are 5.1 g, dietary fiber of 1.2 g (net carbs of 3.9 g), protein of 3.4 g, calories at 170, and fat at 16.1 g. These are a little higher on the carb side than the Peanut Butter Fat Bomb recipe HERE, and thanks to Jill from LOL In Ministry I've cleared up a typing mistake that caused her recipe to...well, let's just say her boys will be leaving her candy alone from now on!

  1. Did you spray your pan with anything before adding the ingredients?

    1. Great Question! I used the mini cupcake liners so I didn't have to use any spray and clean up was so much easier. Hope this helps!
