After all the fun we've had this last weekend and the saga unfolding between my family and our refrigerator, I realized tonight while doing dishes that I haven't posted a Keto recipe in a while. Dinners have been old recipes but I have a few new little "sweet tooth" goodies that I have been trying.
If you like Chocolate No-Bakes, you'll enjoy the low carb (vanilla) version of this recipe. AND they only take 5 minutes to make! Ready? Here we go!
Keto No Bake Cookies
- 2 Tbsp Butter
- 2/3 cup all natural peanut butter
- 1 cup unsweetened all natural shredded coconut
- 4 drops of vanilla stevia or sweetener of your choice
- I used 4 Tbsp of Splenda
- If you use a granulated sweetener then add when melting butter in microwave
What You Will Do:
- Melt butter in microwave.
- Stir in peanut butter.
- Add sweetener and coconut. Mix well.
- Spoon onto sheet pan.
- Freeze for 5-10 minutes.
- Store in the refrigerator, bagged.
Overall there are 3.2 g of Carbs for one cookie. Keep in mind this should make nine cookies. For nutritional information and a printable recipe (added mine to a notebook I'm making of low carb recipes), head on over to How to This and That.
