Crock Pot Scalloped Potatoes...

There may be a lot of changes that come with a move but one thing has NOT changed: I'm still searching through Pinterest every chance I get. I'm really interested in finding easy, delicious recipes for the crock pot. 

You see our Sundays are church days. Where we used to live we had our Sunday evening service at 2 pm. Where we live now the evening service starts at 6 pm, which means there's quite a break in between the morning and evening service. It's nice to let the kids get a full nap in during a rather hectic day, but this gives rise to another problem: the kids have to be fed before we go to church. Oh...and I play the piano for the choir who practices at 5 pm. Hmmm...what to do about dinner. I got it--Crock Pot!

So below is a most delicious recipe that we tried this last Sunday. I put it in while the kids ate breakfast and let it cook all day. I'd make it again just for the mouth-watering smell that greeted us when we arrived home from the morning service! It's super easy! Enjoy--and come back and leave a note if you do get a chance to try it. I'd loved to hear what you thought of it!

Crock Pot Scalloped Potatoes
What You Will Need:
10 pounds of potatoes, peeled and sliced
1 large onion, diced
16 slices thick cut bacon, uncooked and diced
4 cups shredded taco blend cheese
1 28 oz. can cream of chicken soup

What You Will Do:
  • Place half of the sliced potatoes in the bottom of the crock pot.
  • Top with half of the onion, cheese and bacon.
  • Repeat layers.
  • Top with cream of chicken soup.
  • Cook on low, 8 to 10 hours.

Publix Shopping Trip 1/28...

Hello there! Miss me? I have been a teensy busy since my last post over a week ago. Within twelve days we packed our house and moved three states east. And let me tell you...it's definitely been an adventure. I'll save all the juicy details for a later post.

So while there are a lot of changes with a move, one of those changes has been in the area of shopping. There are no HEB's or Food King's where we live now but there is a Publix. Publix is known for being "coupon friendly"...my ear automatically tuned into that statement, being the avid couponer that I am. Their policy includes taking competitor coupons as well as doubling up to $.50! How I've missed the double coupons. Yippee!

Today I took my first coupon trip to participate in a few of the Buy 1 Get 1 FREE deals going on until January 29th at the Publix on County Line Road in...Madison? or is it Limestone County? Oh...it's on the county line. Ha!

I'm super excited to share with you how my trip went. Here goes:
Ta Da!! All of this for $25.00 with a grand savings of....drum roll...$36.77!!

Let me give you a breakdown on these sale items:

I'm Just A Nerd...

My husband tells me often that he wishes it hadn't taken until we were in our late twenties to meet and fall in love.  What would it have been like, he said, if we had met in high school?

Hmmm....

My mind races back to my high school days...and I cringe. You see here in lies the problem: my husband was a jock in high school, captain of the local high school football team that made it to 4-A state semi-finals, star player...you know, the guy that girls like me back then would have fainted had he even said "Hello."
He assures me he would have liked me even then. I tell him he would have been around me just to cheat off my school work. He smiles this most adorable smile and I think, I would have definitely let you just to have you smile at me.

But then I remember me...

I warned him early on in our relationship, I think it was when we first started e-mailing, that I've always been a science geek and a book devour-er. I fell in love with science and math when I was in junior high and never got over it. Let me rephrase that: you can forget about Physics and Calculus. Who needs those anyways. But everything else? It's just a perfect explanation as to why I became a high school science and math teacher.

And books? I had a new one everyday in my backpack. Always! Same today it's just a little more technical. Like, a new book on my Kindle everyday.

So over the last few weeks I've noticed a common theme running through one of my boards over at Pinterest. Do you know how many "Nerd Girl Problem" quotes I've pinned?

Let's just make this "Nerd Girl" humiliation complete by quoting a few of my favorites:
  • Nerd Girl Problem #195: Your idea of an outdoor activity is taking your book outside to read.
  • Nerd Girl Problem #64: People think you are weird because like to smell books. (There's just something about that smell...Ahhhh)
  • Nerd Girl Problem #334: The book you really want is never at the library. (I HATE that!!)
  • Nerd Girl Problem #386:  When you finish a book in a day, and have to wait a year for the sequel. (I have recently sworn off reading trilogies until the whole set is out. That should take care of that problem!)
  • Nerd Girl Problem #113: Books are getting expensive. (Right?)
  • Nerd Girl Problem #65:  You constantly correct everyone's grammar. (Even when I read a book!)
  • Nerd Girl Problem #45: Having to put a great book down to do things like sleep or eat. (Thank goodness for Kindle. I can read in the dark without disturbing anyone!)
  • Nerd Girl Problem: #395: You can't stop your eyes from flitting across the page in your book to catch a word or two of what may happen next. (How about just the end of the book? If it has a good ending it must be a GREAT book!)
  • Nerd Girl Problem #258:  You suggest books to your non-nerdy friends and they don't understand their awesomeness. (Why does that always make me feel like a nerd? Oh wait...duh!)
And my personal favorite...
  • Nerd Girl Problem #250: Being so absorbed in a book you don't hear people calling your name. (Oooops...Sorry! Were you talking to me?)
Fifteen years have passed since I graduated high school and I realize I'm just as big a nerd girl now as I was then. But I feel an arm around my shoulders, drawing me closer to something warm and inviting.  And as I snuggle up next to my dear hubby I smile and think, I'm one lucky nerd!

It's Time...

Back in September I posted HERE that we were packing and getting ready to move to work in full-time Christian service at a church twelve hours away. Our plan at the time was to get everything in order and move by November 1st or Thanksgiving, at the latest. But November came and went with not one person coming to look at our house. I have to say that I was getting a bit frazzled as I posted about our experience HERE. December flew by and still one visit here and another one here but no one seemed interested in buying.

A week ago we came back from Christmas vacation with the decision that it was time to take a step of faith, whether our house was sold or not, and we were moving in two weeks.

Two weeks...

Do you feel what I feel right now? I'm sure it's just rolling off my body and through my computer...

But I found this quote last night on Pinterest and realized someone had just pegged exactly how I need to face these next few days...weeks even....
Enough said. Bring It On!!

Pioneer Woman's Cinnamon Toast...

Mmm...this was DE-Licious! Since we are moving in eight days I have been trying to use up some of the "extra" things in the refrigerator: like, stick butter. Can't put that in a storage unit. I had re-pinned this mouth-watering recipe for Pioneer Woman's Cinnamon Toast, as tried on Foodie Wife-Kitchen, from a friend. Just thought I'd try it out this morning on my kids who ask for Cinnamon Toast Crunch Cereal all the time. Let me show you my son's response...
He ate THREE slices after he'd finger-licked the butter bowl when I wasn't looking. I would say "Yuck!" but don't knock it 'til you try it. The butter mixture is super-good!

Here's how it goes...

Cinnamon Toast


What You Will Need:
8 slices of bread
1 stick salted butter, softened
1/2 cup sugar
1 1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon groung nutmeg (optional)

What You Will Do:
Preheat oven to 350 degrees.

Smush softened butter with a fork. Dump in sugar, cinnamon, vanilla, and nutmeg, if using. Stir to completely combine.

Spread on slices of bread, completely covering the surface all the way to the edges.

Place toast on a cookie sheet. Place cookie sheet into the oven and bake for 10 minutes. Turn on the broiler and broil until golden brown and bubbling. (Took 1 min. on broil for me.)  Watch so it won't burn!

Remove from oven and cut slices into halves diagonally.

Bacon Egg Cups...

With all these new recipes I've been trying and posting about I should have a complete new menu in no time! If you love eggs with cheese and bacon then you are REALLY going to love this little recipe. It comes from Second Chance to Dream under the category 25 Make Ahead Back to School Breakfasts. This is super fast and super easy. Go ahead...make some breakfast!

Bacon Egg Cups


What You Will Need:
12 slices of bacon (or however many cups you are making--I only made 5)
8 eggs (With 5 cups I used four eggs)
1/2 cup shredded cheddar cheese
pinch of salt
1/4 tsp black pepper

What You Will Do:
Preheat oven to 350 degrees.

Whip the eggs, salt, pepper and cheese with a fork. Spray non stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup.

Fill each bacon line muffin cup 3/4 of the way with the egg mixture.

Bake for 30-35 minutes, until the egg cups are golden brown and don't jiggle. Use a knife to scoop them out of the tins. Serve immediately. (I sprinkled a little cheese on the top when they came out of the oven because I love extra cheesy eggs. What can I say?)

Let me know if you try these and what you think. Being on a low-carb diet these were a perfect way to break up the monotony of scrambled eggs and bacon. Enjoy!

Easiest Dinner EVER...

You'll never guess where I found this comic...
Yup...Pinterest. My husband and I just laughed and laughed. It's like a whole new world has opened up! L-O-V-E IT!!

So I said that to say that I am adding a new recipe I pinned and tried today for dinner. I really am turning into a regular chef. My family thanks me. 

We're going to call this recipe...
The Easiest Dinner EVER
What You Need:
Bag of frozen chicken (I used a Kroger Value pack of boneless, skinless chicken breast cut into strips)
Cream Cheese
Can of Corn (drained)
Can of Black Beans (drained)
Can of Rotel (can use Mild, Medium, or Hot if you want a kick)

What You Do:
This is how easy this recipe is. Combine it all in the crock pot, set it on low, and cook for 6-8 hours. Serve with chips or as tacos.

I stirred and started shredding the chicken after about 5 hours because even on low my crock pot is super hot.  After a few hours be aware that it will be a little watery due to the broth from the chicken and the juice from the Rotel. But after shredding the chicken and allowing it to cook two hours longer the sauce had thickened up.

Side Note: When my hubbie and I first tried this it was really bland. So he brilliantly added TexJoy (Tony Catcheries in areas that don't carry TexJoy) and McCormick's California Style Garlic Pepper with Red Bell & Black Pepper (or any Garlic Pepper seasoning). Combine that with fresh tortilla chips from our local Mexican restaurant and you have the makings of a FABULOUS, easy meal.

Bite Size Tiny Apple Pies...

You know how much I've enjoyed perusing through Pinterest. There have already been several posts on fantastic recipes, picture ideas, sewing projects...*sigh* it's awesome! So don't be surprised that I have yet another recipe to share with you.

Grant it not all recipes that I have found have turned out to be anything edible. Just this morning I tried making Cinnamon/Sugar Oatmeal in the crock pot overnight. Trust me, if you find that recipe DO NOT make it. It had the consistency of paste with no flavoring. I'm positive I followed the recipe, but I'm just not sure what went wrong.

Today, though, I wanted to post about an easy apple dessert recipe I tried while at my parent's house. These little bites of goodness are called...

Tiny Apple Pies
(which she posted from Taste of Home)

What You Need:
1/2 c. sugar
2 tsp. cinnamon
1 pkg. (14.1 oz.) refrigerated pie crust
3 tbsp. melted butter, divided
2 medium tart apples, each cut into 8 wedges

What You Do:
In a small bowl, combine the sugar and cinnamon, set aside 1 Tbsp. On a lightly floured surface, unroll the pastry, Brush with 2 Tbsp. melted butter, sprinkle with remaining sugar mixture.
Cut each sheet into 8 one strips, about 8 in. long. Wrap one strip around each apple wedge, placing sugared side of pastry against apple. Place on parchment paper lined baking sheet. Brush tops with melted butter and sprinkle with sugar mixture. Bake at 425 for 13-15 minutes or until pastry is golden brown. 
Serve warm. Makes 16.

*One thing I did learn was to not skimp on the cinnamon/sugar, both inside and outside. Enjoy!
